Upon arrival to the States from Central America, with assistance from his uncle, Chef Luis worked in a Japanese Restaurant. After 3 years of learning the finest in East Asian food, Santa Monica Landmark, Chinois hired him as a Pastry Chef. After mastering every position from Prep to Line Cook, Chef Luis was promoted to Sous Chef. His last position at Chinois was Executive Chef.

Santa Clarita's charm and community prompted Chef Luis to pack up and move where, in 2007, Thelma's (named after his beautiful wife) was opened. Now Chef Luis and his wife of more than 25 years bring to you some of the most beautiful and delicious meals the most distinguished of pallets can enjoy at a reasonable price.
